      Pork Fillet, cut into 1 inch chunks
      2 cloves of Garlic, crushed
      1 red chilli, finely sliced
      1tbsp of toasted sesame seeds
      2tbsps of Soy Sauce (good quality)
      1tbsp finely chopped Ginger
      1tbsp Flour
      Water
      1tbsp Sunflower Oil
      6 Large stalks of Cavalo Nero Kale

      Start by putting your pork pieces in a bowl with the flour till each piece has a light dusting, add more flour if using more pork, so that each piece is covered lightly. Now add the water, soy sauce, ginger, garlic and chilli and give it a good mix. Leave to marinade for a few hours if possible, it’ll still taste good if you are pushed for time but obviously better left longer…

      When you are ready to cook, get a large pan of water on to boil, season with salt and add a splash of oil. This is for the kale. Add the stalks as they are and cover the pan with a lid. Next get your wok on the heat and add the oil, when hot add your pork mixture and give this a good stir so that each piece gets cooked evenly. If you find its thickening too much then add more water, keep the mixture moving in the wok as you don’t want it to stick, pork should take about 7-8mins, same time as the kale. When done, drain the kale and serve straight away on a plate, followed by the pork and then sprinkle with the sesame seeds… and Enjoy!
